Ingredient Notes

  • Beef: Use extra lean ground beef for the protein in this recipe. Ground turkey or sausage could also be be used in place of the beef for the “meat sauce.”
  • Fresh veggies: Onion, garlic and red bell pepper add some extra fibre and flavour to this soup. You can sub in onion powder and garlic powder for the fresh onion and garlic as well.
  • Canned tomatoes: I like to use fire-roasted tomatoes for this soup as they have a deeper and richer flavour. Use diced or crushed fire-roasted tomatoes.
  • Marinara sauce: Use your favourite jar of marinara or spaghetti sauce for the base of this recipe. Try to look for one that’s lower in sodium in possible.
  • Seasonings: Red pepper flakes, Italian seasoning and salt and pepper provide additional flavour. If you want a spicier kick, increase the amount of red pepper flakes.
  • Broth: I typically use reduced sodium beef broth, but vegetable or chicken broth will also work well.
  • Lasagna noodles: Usewhole-grain or fibre-enriched noodles for extra goodness. I like to use Smart lasagna noodles if I don’t have whole grain. Cheese ravioli or tortellini would also be a good replacement for traditional lasagna noodles.
  • Cheeses for topping: Mozzarella, ricotta and parmesan are used to add cheesy flavour. Look for part-skim mozzarella and light ricotta cheese to reduce the saturated fat content. You could also experiment with cottage cheese instead of ricotta if desired..

Tips for the Best Lazy Lasagna

  • If you want to add even more flavour to the soup, cook the onion, garlic and peppers along with the beef before adding it all to the crockpot (or cook it right in the slow cooker if it has a saute function). This helps to caramelize the vegetables and bring out more natural sweetness.
  • This soup thickens up more the longer that it sits. If you make this soup in advance and want it to be more “soupy,” you may wish to stir in some extra broth right before serving. Alternatively, you can eat it thicker like a lazy lasagna casserole the next day.
  • I prefer to add the mozzarella and ricotta cheese separately to each bowl right before serving, so that everyone can top their soup with the desired amount of cheese or skip it altogether. You can add the cheese right to the pot, but it may stick to the bottom of the pot, so clean up may be a little more tricky.
  • If you plan to make and freeze this soup, I recommend making the noodles fresh. Add in the broken noodles while reheating or pre-cook them ahead of time and add them in right before serving. Also don’t freeze the cheese as it might develop a funny texture. Add it in fresh when the soup has been thawed and reheated.

Make Ahead Instructions

If you want to make this lazy day lasagna recipe in advance, here’s what I recommend:

  • Follow the recipe instructions for making the soup, but do NOT add the broken noodles. Cool the soup to room temperature and store in the fridge for up to 2 to 3 days.
  • When ready to serve, you can either dump the soup back into the crockpot and set it to high. Add in the broken noodles and cook for 30-45 minutes or until noodles are tender.
  • Alternatively, if you really want to save time, you can cook the broken lasagna noodles 1-2 days ahead of time following the box instructions so that they are al dente. When storing them, drizzle them with a bit of olive oil to prevent them from sticking together. Store in an air-tight container until ready to serve.
  • When ready to serve, reheat the soup in the crockpot or in a large pot on stovetop and add the noodles in. Top with the cheese and serve!

Recipe FAQs

What kind of pasta is best for lasagna soup?

I like to use whole-grain or fibre-enriched lasagna noodles (i.e. Smart noodles) for extra fibre and nutrients. You can also use other pasta shapes if you prefer, like penne, bowtie or fusilli.

Can I make this soup on stove top?

Yes, it makes a great one pot dinner option! To make on stove top:
– Brown the beef and soften the onions and red bell pepper in a little oil.
– Once soft, stir in the garlic and cook for a couple more minutes.
– Add the fire-roasted tomatoes, marinara sauce, seasonings and broth. Simmer for 20 minutes.
– Add the broken noodles and cook until soft and tender, about 10-15 minutes
– Top with the cheese mixture.

Can I freeze lazy lasagna soup?

Yes! This soup can be frozen in a freeze-safe bag or container for up to three months. However, I have a few tips for the best frozen lasagna soup:

1. Make the noodles fresh. If you plan to make and freeze the soup, I recommend waiting to add the noodles until you’re ready to serve the soup. Add the noodles in when you’re reheating the soup in the crockpot or on stovetop or make them in a pot separately and add them in the thawed soup right before serving.
2. Don’t freeze the cheese. Instead, I recommend thawing the soup first and then reheating and adding the cheese when serving.

Storage & Reheating Guidelines

To store: If you want to store any leftovers, you can store this soup in an air-tight container in the fridge for up to four days.

How to reheat

From frozen: Remove lasagna soup from the freezer and place in the fridge to thaw. When it has thawed completely, reheat the soup either in the crockpot, onstovetop or in the microwave.

From thawed state: When ready to serve, reheat the soup in the crockpot or in a large pot on stovetop and add the noodles in (see make ahead instruction above). Top with the cheese and serve!

Serving suggestions

Serve this easy dinner recipe along with a salad (try this Healthy Caesar Salad, Greek Cucumber Noodle Salad, Tossed Green Salad or this Spring Mix Salad) and/or crusty garlic bread. Sometimes we’ll even have baked kale chips or roasted veggies on the side!

Recipe variations

  • To make low carb: Add zucchini noodles or “zoodles” instead of lasagna noodles.
  • Switch up the meat: Use ground turkey, ground chicken or ground sausage instead of beef.
  • Use different pasta: Fresh or frozen ravioli, campanelle pasta, mafalda noodles (which are like mini lasagna noodles), or any desired pasta can all be used instead of regular lasagna noodles.
  • To make vegetarian: Use lentils or cannellini beans instead of ground beef.
  • Add extra seasonings: Add some onion powder and garlic powder to ramp up the flavour even more!
  • To make dairy-free: Leave off the cheese or sub in a plant-based cheese alternative.
  • To make gluten-free: Use gluten-free lasagna noodles.
  • Add more veggies: Try adding in diced zucchini, carrots, or spinach.

FAQs

How to make lasagna less soupy? ›

Whether you're making a tomato and meat sauce from scratch or using a jarred sauce, you can thicken it with cornstarch to prevent the problem of a soupy lasagna. Cornstarch is a classic binding ingredient that won't affect the sauce's flavor and is much more effective than flour.

How to thicken lasagna without tomato paste? ›

Cornstarch: Make a slurry of half water, half cornstarch and whisk until smooth. Cornstarch is a powerful thickener, so start by whisking in no more than 1 tablespoon of the mixture per 2 cups of simmering sauce; stir and simmer for 2 minutes, check the thickness, and repeat with more slurry as needed.

How do you reheat lasagna in a slow cooker? ›

Simply transfer leftover food from the slow cooker into resealable containers and store in the refrigerator or freezer. Reheat on the stovetop, in the oven, or in the microwave in a microwave-safe dish to 165°F.

Why is my lasagna watery? ›

Watery tomatoes aren't the only culprit for soupy lasagna: Oils from cheese and meat and water from lasagna noodles and vegetables can affect your lasagna's consistency. Draining excess fat from ground beef or sausage before adding it to tomato sauce is imperative to maintain a thick sauce.

Does fresh mozzarella make lasagna watery? ›

Most people use low-moisture mozzarella in lasagna, and I am no exception. Fresh mozzarella tastes phenomenal in lasagna; however, the extra moisture will make the lasagna a bit watery. Sometimes I'll use bagged, shredded mozz in the layers but then will splurge for the good stuff on top.

Can you fix watery lasagna? ›

Pour off as much of the liquid as you can into a small saucepan, and boil it down. When it's reduced, pour it back over the lasagne and stick the whole dish back in the oven for 20 mins, maybe with some extra cheese grated on top.

What is a substitute for tomato puree in lasagna? ›

If you need 1 cup of tomato puree, then use ½ cup of tomato paste mixed with ½ cup of water as a replacement.

Why is my ricotta cheese watery in lasagna? ›

Ricotta cheese, with its creamy texture and mild flavor, is a quintessential ingredient in many lasagna recipes. However, it can also introduce excess moisture if not handled properly. To avoid a runny mess, it's crucial to pat dry the ricotta before incorporating it into your lasagna.

What if I don't have tomato paste for lasagna? ›

You don't have to dash out to the store if you're out of tomato paste; tomato sauce and tomato puree are both an excellent substitute. For every 1 tablespoon of tomato paste needed, use 3 tablespoons of tomato puree or sauce.

Can you eat one week old lasagna? ›

Cooked lasagna keeps in the refrigerator for up to five days if stored in a tightly sealed container to keep out excess moisture and other contaminants. The best way to determine whether or not lasagna has turned is to look for dried-out noodles or a sour smell emanating from the tomato sauce and cheese.

Can I leave food in a slow cooker overnight off? ›

On some occasions, you'll want to leave food in the slow cooker to keep warm, during Thanksgiving or Christmas Dinner, for example, or any other event or holiday. While it's perfectly ok to use your crock pot in this way, try to avoid leaving food on the warming setting for more than four hours.

Should you preheat a slow cooker? ›

Preheating the crock before adding ingredients or cooking on the highest setting for the first hour will ensure a rapid heat start and will shorten the time foods are in the temperature danger zone. This is highly recommended when cooking meat or poultry in a slow cooker.

Is ricotta cheese or cottage cheese better in lasagna? ›

The key to creating the absolute best lasagna is to use a combination of ricotta and cottage cheese. Ricotta brings the rich creaminess while cottage cheese lightens things up and seasons the whole dish. For even more cheese, we recommend also using shredded Mozzarella cheese and Parmesan cheese (or Pecorino Romano).

Can you layer lasagna wrong? ›

There shouldn't be too much or too little filling. Too much between one layer and another will keep you from ever getting a perfect slice. Too little and all you'll taste is pasta.

Why does my lasagna falls apart when I cut it? ›

You may be cutting the finished product too early. Let the lasagna rest at least 10 minutes before you slice it.

How to stiffen up lasagna? ›

You could also use a roux, a cooked mixture of starch and fat (usually flour and butter). It's a highly popular and equally effective thickening agent. To make a roux, melt butter in a pan, add flour, and whisk until it forms a thick golden brown paste. Add it to your tomato sauce and whisk well to prevent clumping.

How do I make my lasagna more solid? ›

If you need to, make a mixture of 1 tablespoon each of all-purpose flour and butter (also called a beurre manié) and add this to the pasta sauce to help thicken it if you don't have time to let the sauce reduce and thicken on its own.

How do you fix lasagna that is too dry? ›

To keep it from tasting dry, add some extra liquid as you reheat it! A splash of water usually does the trick, and you'll want to cover the lasagna with foil, plastic wrap or a paper towel to trap all that liquid inside as it reheats.

How do you fix a soupy casserole? ›

The solution for watery casseroles is instant potato mash powder or cornflour - slake (mix with a little water) at first or it will go lumpy. Stir well. Alternatively, don't add so much water at first, especially if you're using a slow cooker.
